{"id":7,"date":"2025-12-09T13:43:24","date_gmt":"2025-12-09T13:43:24","guid":{"rendered":"https:\/\/ca-la-mare.es\/?p=7"},"modified":"2025-12-11T14:15:18","modified_gmt":"2025-12-11T14:15:18","slug":"carrilleras-de-ternera","status":"publish","type":"post","link":"https:\/\/ca-la-mare.es\/?p=7","title":{"rendered":"Carrilleras de ternera"},"content":{"rendered":"\n<p class=\"is-style-text-subtitle is-style-text-subtitle--1\">Ingredientes<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 carrilleras<\/li>\n\n\n\n<li>1 cabeza de ajo<\/li>\n\n\n\n<li>\u00bd cebolla<\/li>\n\n\n\n<li>\u00bd puerro<\/li>\n\n\n\n<li>1 zanahoria<\/li>\n\n\n\n<li>\u00bc de bulbo de hinojo<\/li>\n\n\n\n<li>\u00bc de bola de apio<\/li>\n\n\n\n<li>4 tomates<\/li>\n\n\n\n<li>700 ml de vino tinto<\/li>\n\n\n\n<li>1 hoja de laurel<\/li>\n\n\n\n<li>1 ramita de tomillo<\/li>\n\n\n\n<li>200 ml de agua<\/li>\n\n\n\n<li>2 patatas agrias<\/li>\n\n\n\n<li>Aceite de oliva suave (para fre\u00edr)<\/li>\n\n\n\n<li>10 g de mantequilla<\/li>\n\n\n\n<li>10 bolas de pimienta<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"is-style-text-subtitle is-style-text-subtitle--2\">Receta<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Retirar la piel de las carrilleras, salpimentarlas, sellarlas en una sart\u00e9n con aceite de oliva y retirarlas.<\/li>\n\n\n\n<li>Cortar la ra\u00edz de apio, la zanahoria, el puerro, el bulbo de hinojo y la cebolla a tacos. Dorar las verduras junto a las bolas de pimienta y la cabeza de ajos en una olla con aceite de oliva.<\/li>\n\n\n\n<li>Cortar los tomates a tacos y a\u00f1adirlos a la olla junto al vino, el laurel, el tomillo y la carrillera cuando las verduras se hayan rehogado. Cocinar a fuego lento durante cuatro horas.<\/li>\n\n\n\n<li>Colar el caldo de la olla y reducirlo junto a la mantequilla en otra olla.
